Peanut butter is amazing stuff! These take about 4 minutes to prepare, they take about 20 minutes to cook, they taste super yummy and are full of good stuff – oh and they are vegan!
What’s not to love! Take them on your long bike ride, or ultra run for carb and protein packed munchies without the junk!
Disclaimer: I’m not the worlds best or most accurate baker so all ingredients are vaguely weighed – add what looks/tastes right to you!
3 ripe bananas
4 tablespoons of maple syrup
4 tablespoons of peanut butter (obviously!)
100g (ish) of oats
Handful of pumpkin seeds (optional)
Handful of chocolate drops (optional – obviously dark chocolate if vegan)
Mash the bananas, whisk in the peanut butter and the maple syrup. Stir in the oats, pumpkin seeds and drops.
Pour into a greased pan and flatten off. Bake for 20-30mins at 180 degrees centigrade.
